El Zagal is a journey that began in 1905 with Francisco Tejedor García, the founder of the company. Today, in the 21st century, his family, in the fourth generation, is leading this project, a project based on a passion for our island, its gastronomy and its traditions.


El Zagal has specialized in the production of this emblematic product with a commitment to quality and respect for a recipe that forms part of Mallorca's history. The Sobrasada, which has already conquered so many palates, is a cured sausage made from selected pork meat seasoned with fine paprika powder. Its fine, creamy consistency and characteristic taste are the secrets of a unique product.


At El Zagal we exclusively produce Sobrasada de Mallorca in all its varieties, including the exquisite Sobrasada of the black Mallorcan pig, an autochthonous breed highly appreciated in our gastronomy. Our facilities are modernized day by day and include a laboratory in which we carry out continuous and comprehensive controls on our raw materials and of the processes of elaboration.


It is no coincidence that we are the only sausage company on the island accredited by the IFS and BRC food safety standards. All this in order to offer our customers the best of products. IFS FOOD  

The IFS (International Food Standard), is an international standard, based on the EN 45011 standard for product certification.


BRC FOOD

The BRC standard is an standard established by the Association of British Retailers or British Retail Consortium (BRC), which links the major trade associations in the United Kingdom.


Protected Geographical Indication "Sobrasada de Mallorca"

At the beginning of 1996, the European Union awarded to “Sobrassada of Mallorca” the Protected Geographical Indication, extending the protection initially granted in Spain to the whole territory of the European Union. The defense of the specific designation, the application of its rules and procedures, as well as the promotion and control of the Sobrasadas of Mallorca is entrusted to the Regulatory Board.

Quality and food safety policy

The business of EL ZAGAL TRADICION, Inc. establishes the main points of the Policy of Quality and Food Safety in the following:


  • EL ZAGAL, is a company that manufactures and distributes food products, especially meat products, especially to the mass market.

  • EL ZAGAL, is an organization that seeks customer loyalty by offering high quality standards to their products and agreeing to maintain this standard. This results in a product of high quality and consistency between different fabrications. We promise to establish and maintain these mechanisms necessary for manufacturing and control, particularly relating to food safety. We also promise to provide the human and economic resources necessary to achieve our purpose. With these aims we have formulated a Quality Assurance System based on HACCP principles, according to the requirements of the Global Standard for Food Safety BRC and IFS.

  • EL ZAGAL, aims to continuously improve their management and production. Consequently, it is necessary to know the requirements and needs of our customers to meet their reasonable expectations.

  • EL ZAGAL through its quality department, development and food safety, commits to:

  1. Control microbiological, chemical and organoleptic physico in both raw materials and manufactured products.
  2. Control of good practice, both hygienic and manufacturing of manipulators.
  3. Control the sanitary conditions of the facilities, machinery, equipment, tools and measuring and control equipment.
  4. Control production process and environmental conditions.
  5. Develop a food security plan.
