Sobrasada de Mallorca

The Sobrasada is an air-dried raw sausage made from selected pork meat, seasoned with salt, paprika and black pepper. It matures slowly according to a traditional production process.


Sobrasada is the most famous sausage on the island of Mallorca and is therefore a Mediterranean product and is protected by the seal of the geographical indication. In traditional Mallorcan cuisine Sobrasada is consumed in different ways: roasted in winter and spread on bread or raw in summer. Also in different Mallorcan recipes we use the Sobrasada again and again, as for example in the “Arròz brut" (a typical rice soup) or also cooked and mixed with honey. Although it is not a problem to store them in a dry place for several years, it is usual to consume the Longaniza in the first winter, the Sobrasada in the summer and the larger pieces the following year, before the new slaughter.
