Squid stuffed with sobrasada

    8 medium or 4 large squid 2 eggs 150 gr of minced meat 150 gr of Sobrasada de Mallorca El Zagal Spicy 1 slice of bread

Cook the eggs in a saucepan (10 min) and clean the squid well if they are fresh. Next, we prepare the filling by mixing the minced meat, the spicy sobrasada and the slice of bread soaked in water and drained with our hands in a bowl. We peel the eggs, chop them and add them to the bowl. Season to taste and fill the squid with the mixture, closing the hole with a toothpick. Prepare the sauce by sautéing the finely chopped onion and garlic in a large frying pan with oil (4-5 minutes). Add the fried tomato and mix well. At this time we add the squid along with their legs and brown them over high heat on both sides. Drizzle with the white wine, lower the heat, cover and cook until the sauce has diminished considerably. We serve the whole or sliced hot squid accompanied by its sauce.
