Lasagna with aubergines, cottage cheese and sobrasada

    600 grs. of eggplant120 grs. of sobrasada250 grs. of cottage cheese60 grs. Parmesan 200 grams of mozzarella 1 handful of pine nuts (quantity to taste) Dried oregano Extra virgin olive oil Freshly ground black pepper Salt

Wash the aubergines, remove the two ends and cut into slices a little less than a centimeter thick. Salt on both sides and let it rest for about 30 minutes to expel the bitterness. Preheat the oven to 180º C.
