Poached eggs with sobrasada and straw potatoes

    2 eggs per person 3 pieces of sobrasada for each egg water 4 medium potatoes olive oil

We will start by peeling the potatoes and cutting them into small, very thin straws. With mandolin it is much faster but if you do not have it, it can be done perfectly with a good knife with a sharp blade as follows: cut the potato into very thin slices, almost transparent and then cut each slice into elongated sticks, as thin as you can.
